Baked Oatmeal for Breakfast!!

I guess blogging is not quite my “thing”.  Over a month ago I promised that I would post a recipe, and only now am I getting around to it!!  My apologies!  Here’s the recipe for Baked Oatmeal that my daughter Abbie serves her family in Nepal.  It is a little like having cake for breakfast, but the ingredients are so nutritious even a conscientious mother doesn’t mind! I hope that you and your family enjoy!!

Abbie’s Baked Oatmeal Breakfast

Ingredients:
3 cups rolled oats
2/3 cup brown sugar
2 tsp. cinnamon
2 tsp. baking powder
1 tsp. salt
1 cup milk
2 eggs
½ cup melted butter
2 tsp. vanilla
¾ cup craisins (optional or add at serving time)

Mix dry ingredients.  Blend in wet ingredients.
Bake at 350 in greased 9×13 pan for 30 minutes

Serve in bowls.  Moisten with warm milk.

Sprinkle with additional ingredients as desired:
Coconut
Nuts
Raisins or Craisins
