Here is an autumn recipe that will delight your family. The Spelt flour makes it light and fluffy, the abundance of apples makes it moist and delicious.  Keep it simple and don’t peel the apples.  Offer it straight from the baking pan for a delightful dessert that will be gobbled right up!! Harvest Apple Cake with Spelt Flour
Preheat oven to 350 degrees
Generously grease a 9×13 inch baking dish.
Cream together in your mixing bowl:
1 cup brown sugar
1/2 cup softened butter
2 eggs
1 cup sour cream
Add the following dry ingredients:
1 tsp. baking soda
1/2 tsp. salt
2 1/2 cups finely ground spelt flour
1 tsp. pure vanilla extract
4 cups coarsely chopped apples
Pour the mixture into a well greased 9×13 inch pan.
Sprinkle the top with a generous amount of turbinado sugar.
Bake at 350 degrees for 45 minutes to 1 hour.
Cool completely. Cut, serve and enjoy!
